Emergency Substitutions when Baking Cakes
1 cup sifted cake flour = 7/8 cup sifted all-purpose flour.
1 cup corn syrup = 1 cup sugar & 1/4 cup liquid used in recipe.
1 cup whole milk = 1/2 cup evaporated milk & 1/2 cup water.
1 cup of buttermilk = 1 tbsp. vinegar & 1 cup of milk.
1 cup sour cream = 7/8 cup of buttermilk or sour milk & 3 tbsp.
butter.
1 cup of brown sugar = 1 cup granulated sugar & 2 tbsp. molasses.
